What is the best thing to eat for the summer?

Produce, Produce, Produce! Summertime is the best time to get fresh produce. My suggestion is to hit your local Farmer’s Market and get the freshest pick! Fruits and vegetables are filled with disease fighting antioxidants. Some of my favorite dishes are vegetarian and contain produce in an array of beautiful colors! Take peppers for example. Red, yellow, and orange peppers are filled with antioxidants and vitamins. They are high in fiber and low in calories…so they can be a great staple for a main dish. Take a whole pepper and slice the top off/clean it out. Now you can fill it with a variety of healthy things. I take a mixture of brown rice, black beans, corn, diced tomatoes and garlic and stuff the pepper and bake it for a few hours. It is very tasty and healthy.

Another great summer option is watermelon. This fruit is not only delicious, but a good source of cancer fighting lycopene. It can serve as a great low calorie dessert also. Watermelon slush is one of my favorites. Take seeded watermelon cubes and blend with a little sugar, diet lime soda, and lime juice. Transfer to the freezer and stir often. It is a cool and refreshing treat.

Another great summer produce option is kale. I love to make a healthy kale smoothie or for dinner I lightly wilt kale and combine with fresh garlic for a fantastic side dish.

Summer screams fresh berries. Pick up blueberries, blackberries, raspberries and strawberries and whip up a simple dessert by placing the cleaned berries over frozen yogurt.

Currently I have lovely tomatoes and basil growing in my garden. When I have company, I will serve a tomato/basil/mozzarella salad. Just chop all and drizzle a little olive oil and this is an easy but delicious appetizer. So, whatever you decide, remember to buy local. Go vegetarian. And be creative. You can’t go wrong!
