Vegan Slower Cooker Recipes
There are many resources available to find excellent slow cooker recipes for vegans! I did a quick search and found mouth-watering recipes on the Cooking Light website: (http://www.cookinglight.com/food/recipe-finder/vegetarian-slow-cooker-recipes). There were delicious-sounding recipes on the Food.Com website as well (http://www.food.com/recipes/vegan-crock-pot). It may be helpful to go to your local library or a bookstore and either check out or purchase a specific recipe book (“Vegan Slow Cooking for Two or Just for You” and “The Vegan Slow Cooker: Simply Set It and Go” both by Kathy Hester).
As you know, the vegan diet is somewhat limited, so I always counsel my patients to be prepared and to plan ahead. It is great that you are thinking of using slow cooking as a way to follow the vegan diet and the thing I love best about slow cooking is that little effort is needed to create a delicious and healthy meal. Many of the vegan slow cooker recipes that I saw used a wonderful variety of colorful vegetables, aromatic herbs, and a plethora of different grains and legumes (quinoa, couscous, barley, rice, black beans, peas, etc).
