Avocado Caesar Salad

  • 1/2 cup Parmesan cheese
  • 1/2 cup canola oil
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic
  • 1/2 avocado, peeled and chopped
  • 1/4 tsp. black pepper
  • 1/4 tsp. salt


  • 1 heart romaine lettuce, washed and chopped
  • 1 tomato, seeded and chopped
  • 1/2 avocado, peeled and sliced
  • croutons (optional)


  1. Combine all ingredients for salad dressing in a food processor or blender until smooth.
  2. Toss salad ingredients together, and top with dressing.
  3. Top with extra grated Parmesan cheese and freshly ground black pepper, if desired.
  4. Store extra dressing in refrigerator.
