1 lb. boneless, skinless chicken breast
1 red onion, thinly sliced
2 cloves garlic, minced
2 Tbsp. extra virgin olive oil
1/2 cup balsamic vinegar
1 can diced tomatoes
2 Tbsp. fresh chopped basil
2 Tbsp. fresh chopped oregano
2 Tbsp. fresh chopped thyme
1. Heat olive oil in a large skillet, and saute onions and garlic.
2. Add chicken and brown on both sides.
3. Add remaining ingredients and simmer until chicken is thoroughly cooked.
