Big Blueberry Muffins

Ingredients:

  • 1 1/2 cups flour
  • 1 cup fresh blueberries
  • 3/4 cup sugar
  • 1/3 cup vegetable oil
  • 1/3 cup milk
  • 1 egg
  • 2 tsp. baking powder
  • 1/2 tsp. salt

Topping:

  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/4 cup butter, softened
  • 1 1/2 tsp. ground cinnamon

Directions:

  1. Preheat oven to 400 degrees F, and line a muffin tin with muffin liners.
  2. In a large bowl, combine 1 1/2 cups flour, 3/4 cups sugar, salt, and baking powder.
  3. Add egg, milk, and oil, and mix to combine.
  4. Gently fold in blueberries.
  5. In a separate bowl, make crumb topping by combining remaining flour, sugar, butter, and cinnamon; mix with a fork.
  6. Spoon muffin batter into muffin cups, filling to the top.
  7. Sprinkle crumb mixture over each muffin.
  8. Bake for 20-25 minutes, until done.
