Breakfast Skillet

Ingredients:

  • 4 redskin potatoes, cubed
  • 1/2 green bell pepper
  • 1/2 red bell pepper
  • 1/2 medium onion
  • 4 eggs
  • 1 cup turkey ham, diced
  • 1/2 cup Colby cheese, shredded
  • Olive oil
  • Salt and Pepper

Directions:

  1. In a large skillet, cook potatoes over medium heat in a small amount of oil; cook until tender and season with salt and pepper.
  2. In a medium skillet, sautee onion and peppers over medium heat in a small amount of oil for three minutes; add ham and cook for three more minutes.
  3. Scramble the eggs in another skillet, and season with salt and pepper.
  4. Serve with potatoes on bottom, topped with eggs, then vegetables, and finally the cheese.
