Broccoli and Rice Casserole

1/2 Cup chopped onion
1/2 Cup chopped red bell pepper
1 Can of broccoli and cheese soup, undiluted
1/4 Cup sour cream
1/4 Water
2 Cups of cooked rice
1 Package (10oz) frozen chopped broccoli


1. Preheat oven to 350. Spray pan with nonstick cooking spray. Set aside.

2. Sautee onion and bell pepper in a large skillet.

3. Once sauteed, Add soup, sour cream and water. Mix together in skillet. (5-10 min)

4. Layer Rice, soup mixture and broccoli in prepared dish.

5. Place in oven and let cook for 20-30 minutes.
