Bruschetta Chicken

  • 4 boneless, skinless chicken breast halves
  • 1/4 cup vinegarette salad dressing
  • 1 medium tomato, chopped
  • 1/2 cup low-fat mozzarella cheese
  • 1/4 cup fresh basil, chopped


  1. Preheat grill to medium.
  2. Marinate chicken in 1/8 cup salad dressing, in refrigerator for at least 10 minutes.
  3. Cook chicken on grill until almost done.
  4. While chicken is cooking, combine tomato, remaining dressing, basil, mozzarella.
  5. Top chicken breasts with tomato mixture and keep on grill until cheese has melted.
  6. Serve over angel hair pasta.
