Carrot Cake with Cream Cheese Frosting

  • 1 egg
  • 1/2 cup oil
  • 1 cup honey
  • 8 oz. soft tofu
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 2 tsp. vanilla
  • 1/2 tsp. salt
  • 3/4 cup grated carrots
  • 2 cups whole wheat flour
  • 1 cup chopped walnuts

Cream Cheese Frosting Ingredients:

  • 1 cup cream cheese
  • 2 Tbsp. honey
  • 2 tsp. vanilla


  1. Mix the following ingredients in a blender until smooth: egg, oil, honey, tofu, cinnamon, baking soda, vanilla, and salt.
  2. Pour mixture into a large mixing bowl.
  3. Mix in carrot and flour with an electric mixer.
  4. Stir in walnuts.
  5. Pour mixture into two 8-inch oiled and floured cake pans.
  6. Bake at 325 for 40-45 minutes.
  7. Let cool, and top with cream cheese frosting, if desired.

To make cream cheese frosting, combine all ingredients and beat with electric mixer until creamy and easy to spread.
