Chicken Stuffed Bundles

1 Tbsp. butter
1/4 cup green onions, sliced
2 cups dried unseasoned bread cubes
1/3 cup dried cranberries
1/3 cup Healthy Balance Apple Juice
1/3 cup water
2 Tbsp. Equal or Splenda
1/4 tsp. salt
1/8 tsp. ground pepper
4 boneless skinless chicken breast halves, pounded to 1/4 inch thickness


1 1/2 cup Healthy Balance Apple Juice
1/2 of water
2 Tbsp. cornstarch
1 Tbsp. lemon juice
2 Tbsp. Equal or Splenda


1. Melt butter in a small skillet and then add the green onions. Cook, stirring occasionally, 1 to 2 minutes or until tender.
2. Place butter and onion mixture in a bowl with the bread cubes and dried cranberries and mix together.
3. Boil the apple juice and water together. Once boiled add to mixture in bowl until all the cubes are moistened.
4. Stir in Equal or Splenda, salt, and pepper into the mixture in bowl.
5. Lay chicken breasts flat on surface. Sprinkle salt and pepper to taste, if desired. Place 1/2 cup of the stuffing mixture into the center of each chicken breast.
6. Fold in the sides of chicken to form a “bundle”.
7. Use wooden picks to hold the “bundle” together.
8. Place the “bundles” in a sprayed baking pan.
9. Bake in a preheated oven at 350 F for 35 to 40 minutes, or until chicken and stuffing reach 160F.

While the chicken bakes; prepare your glaze:

1. Combine apple juice, water, cornstarch and lemon juice in a small saucepan. Stir until smooth.
2. Bring to a boil over Medium heat, stirring frequently. Continue to boil until mixture begins to thicken.
3. Remove from heat and stir in your Equal or Splenda.

When chicken is finished spoon glaze over your baked Chicken Bundles.
