Cilantro Lime Chicken

  • 1lb. boneless, skinless chicken breasts, cubed
  • 2 small onions, chopped into wedges
  • 1 lime
  • 1-2 jalapeno peppers, seeded and sliced
  • 1 piece fresh ginger, sliced thinly
  • 2 Tbsp. fresh cilantro, chopped
  • 2 Tbsp. reduced-sodium soy sauce


  1. Remove 3 strips of peel from line, and slice thinly.
  2. Juice 2 Tbsp. of juice from lime; set aside.
  3. Heat oil in a large skillet over medium-high.
  4. Add chicken, jalapeno, and ginger; stir-fry for 3 minutes, or until chicken is no longer pink.
  5. Reduce heat to medium, and add onions; stir-fry for 5 minutes.
  6. Add lime peel, lime juice, soy sauce, and cilantro; stir-fry 2 minutes, mixing well.
  7. Serve with steamed rice.
