Cilantro Pesto Pasta

  • 1 lb. bowtie pasta
  • 1 bunch fresh cilantro
  • 5 cloves garlic
  • 1 Tbsp. lime juice
  • 1/4 cup Parmesan Cheese, grated
  • 1/2 tsp. cayenne pepper
  • 1/2 cup toasted pine nuts
  • 1/2 cup olive oil


  1. Cook pasta according to package directions.
  2. Place cilantro, garlic, vinegar, cheese, pepper, and pine nuts in a food processor and blend.
  3. Add olive oil and blend; add additional oilve oil to reach desired consistency.
  4. Drain cooked pasta, and return to pot.
  5. Add pesto to pasta, and stir over low heat until well blended and heated.
  6. Serve with grilled chicken, if desired.
