1 (18-ounce) package refrigerated “slice and bake” cookie dough
1 (8-ounce) package cream cheese, softened
1/3 cup sugar
1/2 teaspoon vanilla
1 1/2 cups fresh strawberries, sliced
Other seasonal fruit (e.g. kiwi, blueberries, black berries, raspberries, mandarin oranges, pineapple), cut into slices or chunks
1 package sugar-free strawberry pie glaze
Preheat oven to 375 degrees F.
Line an ungreased 14-inch pizza pan with cookie dough cut in 1/8-inch slices, overlapping slightly.
Bake 12 minutes or until light brown; remove from oven and let cool.
In a medium bowl, combine cream cheese, sugar, and vanilla; spread over cooled cookie crust.
In a medium bowl, combine strawberry glaze and strawberry slices; spread over top of cream cheese.
Arrange fruit over strawberry glaze layer in any design you want (use your imagination).
Refrigerate until ready to serve.
