Fruity Whole Grain Muffins

Ingredients:

  • 1-1/2 cups quick oats
  • 1-1/4 cups whole-wheat flour
  • 1 t. baking powder
  • ¾ t. baking soda
  • ¾ t. ground cinnamon
  • 1 C. raisins, dried cherries or dried cranberries
  • 1 C. unsweetened applesauce
  • ½ C. milk
  • ½ C. brown sugar, firmly packed
  • 3 T. vegetable oil
  • 1 egg, lightly beaten

Directions:

  1. Preheat oven to 400°F.
  2. Line twelve medium muffin cups with paper baking cups or spray bottoms with cooking spray.
  3. Combine oats, flour, baking powder, baking soda and cinnamon in large bowl.
  4. In medium bowl, blend applesauce, milk, sugar, oil and egg; add to dry ingredients. Stir till dry ingredients are moistened.
  5. Fill muffin cups almost full.
  6. Bake 20 to 22 minutes or until deep golden brown.
  7. Cool in pan 5 minutes. Serve warm!
