Grapefruit and Watercress Salad

Ingredients:

  • 1 Tbsp. white-wine vinegar
  • 1 tsp. sugar
  • 1 Tbsp olive oil
  • 2 ruby red grapefruits
  • 2 bunches watercress, tough ends removed
  • 1 avocado, pitted and peeled; thinly sliced lengthwise and halved crosswise
  • Coarse salt and ground pepper

Directions:

  1. To make dressing: In a large bowl, whisk together vinegar, sugar, and oil until combined.
  2. Peel and cut grapefruit into segments.
  3. Add watercress, avocado, and grapefruit to bowl with dressing.
  4. Season with salt and pepper; toss gently to combine. Serve immediately.
