Grilled Shrimp with Spicy Mango Sauce

Ingredients:

  • 1 mango, peeled, pitted, and chopped
  • 1 large shallot, peeled and chopped
  • 1 jalapeño pepper, seeded
  • 1/4 cup fresh lime juice
  • 1 tsp. honey
  • 1 lb. large shrimp, peeled and deveined
  • Salt and pepper

Directions:

  1. Puree mango, shallot, and jalapeño in blender or food processor.
  2. Add honey and lime juice, and season to taste with salt.
  3. Preheat grill to medium-high.
  4. Place shrimp in a bowl, and drizzle with 2 Tbsp. of the sauce; season with salt and pepper.
  5. Thread shrimp onto skewers and grill about 2-3 minutes on each side, until shrimp is just cooked.
  6. Serve shrimp over rice pilaf and drizzle remaining sauce over top.
