Lemon-Lavender Strawberries

  • 1 pound fresh strawberries
  • 6 Tbsp. water
  • 1/4 cup fresh lemon juice
  • 3 Tbsp. sugar
  • 3 Tbsp. dried lavender flowers
  • Whipped cream (optional)


  1. Rinse and drain strawberries.
  2. Hull strawberries and cut into slices; put slices in a large bowl and set aside.
  3. In small saucepan over low heat, combine water, lemon juice, sugar and lavender and simmer, stirring occasionally, for about 3 minutes or until sugar is dissolved and lavender is infused.
  4. Remove from heat and strain syrup, discarding the blossoms.
  5. Pour strained syrup over strawberries and toss gently to mix.
  6. Serve immediately in stemmed glasses.
  7. Top with a dollop of whipped cream, if desired.
