Mint Chocolate Pudding

2 packages of sugar-free fat-free chocolate instant pudding mix.
2 1/2 cups of fat-free half-n-half
1/2 cups of fat-free sour cream
1 tsp vanilla
1/4 tsp peppermint extractr
1 1/2 cups of thawed frozen fat-free whipped topping, divided
6 sugar-free peppermint patties, chopped


1. Whisk pudding mix with half n half according to directions.
2. Stir in sour cream, vanilla and peppermint extract until smooth.
3. place pudding in either parfait glasses or a large dish and top with whipped cream.
4. Chill for 1 hour or until completely cool.
5.With each serving, garnish with a TBS of Whipped cream (or as much as you wish) and chopped pepperment patties.
