Quinoa Veggie Hash

• 1 cup uncooked quinoa
• 2 tablespoons cooking oil
• 2 medium potatoes, diced
• 1 small onion, chopped
• 2 large stalks celery, chopped
• 1 small green bell pepper, chopped
• 1/2 small zucchini, chopped
• 1 can (16 oz) corn
• Cajun seasoning
• 2 teaspoons chopped peanuts


1. Cook quinoa.
2. Thoroughly cook potatoes in oil until slightly crispy.
3. Add onion, celery and bell pepper. Cook until tender.
4. Add zucchini and corn until heated through. Remove from heat.
5. Add peanuts to the quinoa and stir. Mix with vegetables in serving bowl.

Serves: 4-6
