5 lbs. Yukon Gold or Redskin Potatoes
1 package Ranch dressing mix
8 oz fat free cream cheese
4 Tbsp. skim milk
1. Cut potatoes into large chunks, and boil in a pot until tender.
2. Drain potatoes and transfer to a large mixing bowl.
3. Add cream cheese, dressing mix, and milk.
4. Beat with a mixer until smooth.
