Roasted Acorn Squash

  • 2 acorn squash, halved
  • 3 Tbsp. butter
  • 2 onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 tsp. chili powder
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 1/2 tsp. ground pepper


  1. Preheat oven to 350 degrees.
  2. Place acorn squash halves on a baking sheet and bake for 50 minutes until tender; let cool.
  3. Melt butter in a large skillet over medium heat, and saute the onions.
  4. Discard seeds from the squash, spoon out the flesh and chop into pieces.
  5. Add squash and spices to skillet.
  6. Cook and stir until well mixed and squash is heated.
  7. Serve immediately.
