Salmon with Spicy Fruit Salsa

  • 4 salmon fillets
  • 1 cucumber, finely diced
  • 1 cup fresh pineapple, finely diced
  • 2 green onions, thinly sliced
  • 1/4 cup fresh basil, chopped
  • 1 jalapeño, seeded and minced
  • 2 Tbsp. lime juice
  • 2 Tbsp. olive oil
  • 1 Tbsp. honey
  • salt and pepper


  1. In a medium bowl, mix together lime juice, honey, and 1 Tbsp. oil.
  2. Add cucumbers, onions, pineapple, jalapeño, and basil; season with salt and pepper and toss to combine.
  3. Season salmon with salt and pepper on each side.
  4. Heat remaining oil in a large skillet over medium-high heat.
  5. Add salmon and cook until opaque, flipping once.
  6. Serve salmon topped with salsa.
