Strawberry Muffin Bread

  • 1 cup strawberries, chopped
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. vanilla


  1. Preheat oven to 375 degrees F, and grease a 9×5 inch loaf pan.
  2. In a small bowl, combine oil, milk, egg, and vanilla; beat lightly.
  3. In a medium bowl, combine flour, sugar, salt, cinnamon, and baking powder. Add strawberries, and toss to combine.
  4. Pour liquid mixture into flour mixture and stir until well combined.
  5. Fill loaf pan with batter.
  6. Bake for 25 minutes, until top is browned.
