Tex-Mex Fiesta Chicken

  • 2 boneless, skinless breast halves
  • 1 green bell pepper, seeded and thinly sliced
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup white cheddar cheese, grated
  • 1 tsp. olive oil
  • 1/4 tsp. ground cumin
  • salt and pepper to taste


  1. Preheat broiler; line rimmed baking sheet with foil.
  2. Place bell pepper, onion, and oil on baking sheet, and season with salt and pepper.
  3. Broil for 10 minutes.
  4. Push vegetables to one side of baking sheet, and place chicken on the other side.
  5. Season chicken with salt, pepper, and cumin, and sprinkle cheese over top.
  6. Broil about 15-20 minutes, until chicken is cooked all the way through and cheese begins to brown.
  7. Serve with a side of guacamole.
