4 Slices of Mozzarella cheese (2 ounces per slice)
8 Slices of Whole-Wheat bread, toasted.
8 Slices of Tomato
2 tsp of olive oil
1/4 tsp of black pepper
1/4 cup sliced or chopped fresh Basil
1. Place 1 slice of cheese on each of 4 toasted slices of bread.
2. Toast 1 cycle in a toaster oven, set on high; Or, place on cooking pan and toast in oven on broil. Let sit until cheese begins to melt and turn brown.
3. Top with tomato and drizzle a bit of oil on top.
4. Add the pepper and basil. Seal sandwich with remaining toast and cut in half diagonally.
