Turkey Burritos

Ingredients:

  • 1 lb. ground turkey
  • 1 pkg. whole wheat tortillas
  • 1 small onion, diced
  • 1 cup salsa
  • 1 clove garlic, minced
  • 1 tsp. ground cumin
  • 1 can enchilada sauce
  • 1-2 cups cheese, shredded

Directions:

  1. Brown turkey in a large skillet; drain.
  2. Return to heat, and add onion, salsa, garlic, and cumin. Simmer for 10 minutes.
  3. Spoon meat mixture onto center of tortillas; roll each tortilla up, folding edges inward.
  4. Place burritos on a baking sheet.
  5. Spoon enchilada sauce over each burrito, and sprinkle cheese over top.
  6. Heat burritos in 300 degree oven for 5 minutes, or until cheese is melted.
  7. Serve immediately.
