Zucchini Pancakes

Ingredients:

3 eggs
2 zucchini, grated
1/2 c. whole wheat flour
butter
milk

Directions:

  1. Beat the eggs until will mixed.
  2. Stir in zucchini.
  3. Add flour, and mix until lumps are gone (extra flour or a little bit of milk can be used to obtain a good consistency).
  4. Fry the batter in a preheated skillet, with a little bit of butter, over medium-high.
  5. Top with grated cheese, if desired.

These are a great finger food and make a balanced meal.
