2 zucchini, grated
1/2 c. whole wheat flour
- Beat the eggs until will mixed.
- Stir in zucchini.
- Add flour, and mix until lumps are gone (extra flour or a little bit of milk can be used to obtain a good consistency).
- Fry the batter in a preheated skillet, with a little bit of butter, over medium-high.
- Top with grated cheese, if desired.
These are a great finger food and make a balanced meal.
