Brown Rice Fruit Pudding

  • 1 cups water
  • 1/4 Orchard Peach Mango 100% Juice
  • 1/2 cup uncooked brown rice
  • 3 teaspoons grated lemon peel, divided
  • 1/4 teaspoon salt
  • 3 cups 2% milk
  • 3 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cubed fresh mango, ground cinnamon


  1. In a large saucepan, combine the water, juice, rice, 1-1/2 teaspoons lemon peel and salt. Bring to a boil.
  2. Reduce heat; cover and simmer for 30-45 minutes or until tender.
  3. Stir in milk and brown sugar. Cook, uncovered, for 40-50 minutes or until desired consistency, stirring occasionally.
  4. Remove from the heat; stir in vanilla and remaining lemon peel. Top with cubed mango and a sprinkle of cinnamon.
  5. Chill if desired. Spoon into 4 dessert dishes.
