Vegan Pumpkin Muffins

  • 1 cup canned pumpkin (or 1 Cup Fresh baked pumpkin)
  • 2 Tbsp. coconut oil
  • 4 Tbsp. applesauce
  • 1/2 cup raw sugar
  • 1/2 cup vanilla almond milk
  • 1 1/4 cup flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon


  1. Preheat oven to 350 degrees. Line or grease muffin pan.
  2. Mix together pumpkin, oil applesauce, sugar and almond milk.
  3. Sift in the flour, baking soda, salt and cinnamon. Stir together until well combined.
  4. Fill muffin cups evenly. Bake for 20-25 minutes, until toothpick inserted in the center of muffins comes out clean. Cool on wire rack.
