Roasted Baby Carrots

  • 1 pound baby carrots
  • 2 teaspoons olive oil
  • 1/8 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon dried tarragon


  1. Preheat oven to 450 degrees.
  2. Combine all ingredients on a jelly-roll pan. Toss gently to coat.
  3. Bake for approximately 15 minutes or until carrots are desired degree of doneness and lightly brown, stirring once.
