Apple Cinnamon Pork Medallions

Ingredients:

  • 1 1/4 cup Old Orchard Apple Juice
  • 2 tsp. ground Cinnamon
  • Few Cinnamon Sticks
  • 1/4 tsp. salt
  • 1/8 tsp. freshly ground black pepper
  • 1/8 tsp. ground cloves
  • 1 lb. Pork Medallions
  • 1 TBSP Olive Oil
  • Applesauce garnish (optional)

Directions:

  1. Combine 1 cup apple juice, cinnamon sticks, cloves, and 1 tsp. ground cinnamon in plastic bag—place pork into bag, shake, and allow to marinate for at least one hour.
  2. When ready to cook, take out pork and cook in hot pan with olive oil, browning both sides of meat.
  3. Add 1/4 c. apple juice left, sprinkle cinnamon, salt, and pepper into pan over pork. Continue to heat until flavors are blended.
  4. Garnish with fresh cinnamon sticks, and serve with applesauce if desired—enjoy!
