Carrot Salad

Ingredients:

  • 6 large carrots, peeled
  • 1/4 c fresh lemon juice
  • 2 cloves garlic, finely chopped
  • 2 tsp ground cumin
  • 1 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 c olive oil
  • 1/4 c finely chopped parsley

Directions:

  1. Cook carrots until just done, about 10 minutes.
  2. Drain carrots and cut into 1/2 inch thick slices.
  3. Whisk together remaining ingredients.
  4. Toss carrots in the mixture. Serve cold.
