Southern Fettuccine

  • 1 cup skim milk
  • ¼ cup green onion, finely chopped
  • 1/2 tsp olive oil
  • 1/8 tsp salt
  • 1/8 teaspoon ground black pepper
  • 1 tbsp chopped pimiento
  • 1 tbsp freshly grated Parmesan cheese
  • 2 cups fettuccine, cooked


  1. In a medium skillet over high heat, combine the milk, green onions, olive oil, salt and pepper. Cook and stir for 5 minutes.
  2. Add the pimiento and cheese; stir until the cheese is melted.
  3. Pour over cooked fettuccine and serve immediately.
