Do vegetables lose some of their nutrition when they are cooked? Is there a certain way to prepare them that is best, or is it better to eat them raw?

Heat and water can cause fruits and vegetables to lose some nutrients. If you enjoy raw fruits and vegetables, I suggest cleaning them first using a soft brush and water. Soaking them may cause some of the vitamin and mineral content to seep out. Also, when possible leave on the skins of various fruits and vegetables, as many nutrients are found just below the skin.

If you do not like raw fruits and vegetables, there are several ways to prepare these that create minimal nutrient loss. Since vitamins B and C can be destroyed by heat and water, I would recommend cooking them for a short time in a minimal amount of water. Steaming would allow crisp and tender fruits and vegetables with minimal nutrient loss.
