What is a healthy and filling vegetarian breakfast?
I can certainly provide a lot of healthy and tasty choices for a vegetarian breakfast. The breakfast options that you may enjoy, however, will depend on what type of a vegetarian you are. There are several different types of vegetarian:
Lacto-ovo vegetarians omit red meat, poultry, and fish but do eat eggs, milk and milk products (cheese, yogurt) in addition to plant-based foods.
Lacto-vegetarians omit eggs, red meat, poultry, and fish but will allow milk products.
Vegans eliminate all foods coming from animals including meat, poultry, fish, milk, eggs, cheese, yogurt, etc. They consume only plant-based foods.
If you follow a lacto-ovo diet, you can enjoy a variety of veggie egg-based dishes. A tasty omelette may include a variety of vegetables like tomatoes, peppers, onions, spinach, artichokes, olives and also include a variety of yummy cheeses like feta, goat, Gruyere, and cheddar. You could create a yummy yogurt smoothie and include a variety of fruit (strawberries, blueberries, raspberries, mango, peaches) along with Greek or regular yogurt, fruit juice, and for added fiber you may want to add flaxseed or wheat germ. Another great option may be high fiber cereal and milk. There are a variety of healthy cereals on the market so just check the label and try to choose one with >4 grams of fiber per serving. Lacto-ovo vegetarians can enjoy fantastic French toast too! There are many recipes that call for hearty bread, eggs, milk and fresh fruit/spices.
If you follow the lacto-vegetarian diet, then you can consume the smoothie or cereal options mentioned before but you will obviously want to skip the options with egg. Ideas for lacto-vegetarian breakfast may include a hearty banana/whole grain bread sandwich. Just toast some good bakery bread and slice bananas and top the slices and add peanut butter and cinnamon. You could whip up a breakfast couscous! Just boil the couscous and then add sliced nuts, chia seeds, nutmeg and a few tablespoons of warm maple syrup. Try your own creation of a homemade tofu scramble! Skip the eggs and crumble extra firm tofu in a hot skillet and brown. To this, add fresh cut veggies, spices and finish with sliced avocado and a dollop of sour cream.
Vegan breakfasts can be just as delicious as any traditional breakfast. You could make yourself steel cut oats and add some canned pumpkin and spices and top with soy milk. A green smoothie may be just what the doctor ordered. Combine soy milk, kale, apples, bananas and some cooked oats together and you have a hearty breakfast. Vegans could indulge in a tofu scramble as I mentioned above (but skip the sour cream at the end).
