Baked Chicken Tenders

Ingredients:

  • 1 1/2 lbs. chicken tenderloins
  • 1/3 cup all-purpose flour
  • 1 large egg, lightly beaten
  • 4 cups crisp rice cereal
  • 2 Tbsp. olive oil
  • Salt and pepper

Directions:

  1. Preheat oven to 475.
  2. Place flour in a shallow bowl, and egg in a separate bowl.
  3. Season flour and egg with salt and pepper, to taste.
  4. Pulse cereal and oil in a food processor until finely processed; season with salt and pepper.
  5. Transfer cereal mixture to a third bowl.
  6. Coat chicken in flour, shaking off excess.
  7. Coat chicken next with egg, and lastly in cereal mixture, pressing it firmly to the meat to make sure it adheres.
  8. Place chicken on a baking sheet, and cook 10-15 minutes, turning over halfway through, until light brown.
