Beef and Mango Wraps

  • 1 Tbsp. Dijon mustard
  • 3 Tbsp. fresh lime juice
  • 1 Tbsp. olive oil
  • Coarse salt and pepper
  • 1/2 medium red onion, thinly sliced
  • 1 red bell pepper, seeded, cut into thin pieces
  • 1 mango, peeled, and cut into 1/2 inch wide strips
  • 4 whole wheat wraps or tortillas
  • 4 cups loose spinach, trimmed
  • 1 lb. cooked roast beef, thinly sliced


  1. In a large bowl, whisk together mustard, lime juice, and oil; season with salt and pepper.
  2. Add onion, bell pepper, and mango, and toss to combine.
  3. Lay out tortillas or wraps and line each with spinach.
  4. Arrange beef slices down center of each wrap.
  5. Top beef with mango mixture.
  6. Fold two opposite sides of wraps, and roll up tightly.
  7. Cut in half and serve.
