Blueberry Zucchini Bread

Ingredients:

  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 1 1/2 tsp vanilla
  • 1 tsp salt
  • 1 cup white flour
  • 1 cup whole wheat flour
  • 1 1/4 cups fresh blueberries
  • 2 cups zucchini, grated
  • 1 Tbsp cinnamon
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder

Directions:

  1. Preheat oven to 350 degrees.
  2. With an electric mixer, beat together eggs, sugar, oil, and vanilla, until well combined and thickened.
  3. Add flour, zucchini, salt, cinnamon, baking soda, and baking powder; stir with a spoon just until blended.
  4. Carefully fold in blueberries.
  5. Pour batter into two greased bread pans.
  6. Bake for one hour.
