Broccoli Cheddar Baked Potatoes

  • 4 large baking potatoes
  • 1 cup broccoli florets, steamed
  • 1 cup cauliflower florets, steamed
  • 2 Tbsp. margarine
  • 1 cup cheddar cheese, grated
  • Salt and pepper to taste


  1. Preheat oven to 400 degrees.
  2. Use knife or fork to poke several slits in each potato.
  3. Cook potatoes in oven 45 minutes to 1 hour, until done.
  4. Cut open each potato, and push ends toward each other to open up.
  5. Add 1/2 Tbsp. margarine, salt, pepper, 1/4 cup broccoli, and 1/4 cup cauliflower to the top of each potato.
  6. Serve and enjoy for lunch or alongside your favorite dish.
