Broccoli Quiche

  • 2 cups chopped cooked broccoli
  • 3/4 cup fat free egg substitute
  • 1 cup skim milk
  • 1/2 cup reduced-fat Monterey Jack cheese, shredded
  • 1/2 cup green peppers, diced
  • 3 scallions, thinly sliced
  • 2 Tbsp. fresh dill, minced
  • 2 Tbsp. Parmesan cheese, grated


  1. In a large bowl, mix milk and egg substitute.
  2. Stir in broccoli, Monterey Jack, scallions, and dill.
  3. Coat a 9” pie dish with non-stick cooking spray, and add broccoli mixture.
  4. Sprinkle with Parmesan cheese.
  5. Bake at 375 degrees for 30 minutes.
  6. Serve and enjoy!
