Crab Frittata

  • 6 eggs
  • 6 1/2 oz. lump crabmeat
  • 1 large roma tomato, chopped finely
  • 1 Tbsp. olive oil
  • 1 medium green pepper, chopped finely
  • 2 cloves garlic, minced
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. hot pepper sauce


  1. Preheat broiler.
  2. Heat oil in oven-proof skillet over medium-high; add bell pepper and garlic and cook until soft.
  3. Beat eggs in a medium bowl.
  4. Add crabmeat, breaking up any large pieces; add salt, pepper, and hotsauce. Blend well.
  5. Add tomato to skillet, and cook 1 minute. Add egg mixture.
  6. Reduce heat to medium-low and cook until eggs begin to set around edges (about 7 minutes).
  7. Place skillet under broiler, six inches from heat, and cook 2 minutes, or until frittata is set and is beginning to brown.
  8. Remove from heat and serve immediately.
