Fresh Basil Pesto

  • 2 cups fresh basil leaves, stems removed
  • 3 cloves garlic
  • 3 Tbsp. pine nuts
  • 1/2 cup extra virgin olive oil
  • 1/2 cup Parmesan cheese, grated
  • salt and pepper to taste


  1. Put garlic in a food processor, and mince.
  2. Add basil, pine nuts, and salt and pepper to taste.
  3. Process, and while it is running, slowly add olive oil through the feed tube.
  4. Process until all ingredients are pureed.
  5. Add cheese and process until well mixed.
  6. Add additional olive oil to reach desired consistency.
  7. Serve with crackers, pita, or over pasta.
