Redskin Potatoes with Parsley

  • 2 lbs. redskin potatoes
  • 1/3 cup chopped parsley
  • 1 Tbsp. butter
  • Salt and pepper


  1. Set a steamer basket in a large saucepan with lid, and fill with salted water until water is just below basket.
  2. Bring water to a boil, and place potatoes in basket.
  3. Steam potatoes until tender (15 to 20 minutes).
  4. In a large bowl, place potatoes with parsley and butter; season with salt and pepper.
  5. Toss until potatoes are evenly coated, and serve.
