Roasted Halibut with Asparagus

  • 4 6oz. halibut filets
  • 1 lb. fresh asparagus, trimmed
  • 1 1/2 cups cherry tomatoes, halved
  • 3 sprigs fresh rosemary
  • 1 Tbsp. olive oil
  • Juice of one lemon
  • Fresh ground black pepper


  1. Preheat oven to 400 degrees.
  2. Lay asparagus stems in the bottom of a baking pan or roasting dish.
  3. Scatter tomatoes over top, then top with rosemary sprigs.
  4. Place halibut on top of vegetables.
  5. Mix olive oil and lemon juice together in a small bowl, then drizzle over the fish.
  6. Sprinkle halibut with freshly ground black pepper.
  7. Roast for 18-20 minutes, until fish is thoroughly cooked.
