Scrambled Eggs w/ Tomatoes & Onion

  • 6 eggs
  • 1 large yellow onion, peeled and chopped
  • 1 1/4 lbs. tomatoes, diced
  • 3 Tbsp. olive oil
  • Salt and pepper


  • In a medium-sized skillet, heat olive oil over medium heat; cook until onions are translucent.
  • Add tomatoes and cook over low heat for about 40 minutes, or until liquid evaporates.
  • Using a whisk, beat eggs in a bowl until well blended.
  • Season with salt and pepper to taste.
  • Add eggs to skillet and cook over medium heat , stirring constantly, until eggs have set.
  • Serve immediately.
