Stuffed Bell Peppers

  • 6 colored bell peppers, de-seeded and halved lengthwise
  • 1 lb. ground turkey
  • 1/2 cup salsa
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 tsp. dried oregano
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried basil
  • 1/2 tsp. rubbed sage
  • 1/2 tsp. pepper
  • 1 1/2 cups cooked rice
  • 1/3 cup shredded, low-fat mozzarella cheese
  • 2 Tbsp. olive oil


  1. Preheat grill to medium heat.
  2. Brown turkey in a large skillet over medium heat.
  3. In another skillet, sauté onions, celery, garlic, and herbs in 1 Tbsp. of olive oil over medium heat, until onions are translucent. Add salsa and simmer.
  4. Combine sauce mixture, cooked turkey, and cooked rice in a large skillet.
  5. Stir until well combined.
  6. Spoon stuffing into pepper halves.
  7. Brush outside of peppers with remaining olive oil, and grill for 10-15 minutes.
