Stuffed Bell Peppers

6 colored bell peppers, de-seeded and halved lengthwise
1 lb. ground turkey
1/2 cup salsa
1 medium onion, chopped
2 stalks celery, chopped
2 cloves garlic, minced
1 tsp. dried oregano
1/2 tsp. dried thyme
1/2 tsp. dried basil
1/2 tsp. rubbed sage
1/2 tsp. pepper
1 1/2 cups cooked rice
1/3 cup shredded, low-fat mozzarella cheese
2 Tbsp. olive oil
Preheat grill to medium heat.
Brown turkey in a large skillet over medium heat.
In another skillet, sauté onions, celery, garlic, and herbs in 1 Tbsp. of olive oil over medium heat, until onions are translucent. Add salsa and simmer.
Combine sauce mixture, cooked turkey, and cooked rice in a large skillet.
Stir until well combined.
Spoon stuffing into pepper halves.
Brush outside of peppers with remaining olive oil, and grill for 10-15 minutes.
