Stuffed Pork Chops

  • 4 slices whole wheat bread, cubed
  • 1/4 cup dried cherries
  • 1/4 cup fresh parsley, chopped
  • 4 boneless pork loin chops
  • 2 Tbsp. butter, melted
  • 1 Tbsp. brown sugar
  • Coarse salt and pepper


  1. Preheat broiler. Line a rimmed baking sheet with foil.
  2. In a medium bowl, combine bread, cherries, parsley, butter, and 1 Tbsp. water; Season stuffing with salt and pepper, toss to combine.
  3. Place pork chops on baking sheet.
  4. With a paring knife, cut a deep pocket in each pork chop; fill with stuffing.
  5. Press each pork chop down to flatten slightly; season with salt and pepper, and sprinkle sugar over top.
  6. Broil, without turning, until meat is slightly brown and throughly cooked (8 to 10 minutes).
