Toasted Crab Baguettes

  • 12 oz. crabmeat, flaked
  • 1 baguette
  • 1 can reduced-fat condensed cream of celery soup, undiluted
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup chopped celery
  • 1/4 cup sliced scallions
  • 1 Tbsp. lemon juice
  • 1/8 tsp. grated lemon peel


  1. In a medium sized bowl, combine crabmeat, soup, celery, scallions, lemon juice, and lemon peel, until well mixed.
  2. Cut baguette into thin slices, and arrange slices on 2 un-greased baking sheets.
  3. Broil bread slices for 1 minute on each side, or until lightly toasted.
  4. Spread a spoonful of crab mixture onto each slice, and top with Parmesan cheese.
  5. Broil 2 more minutes, until slightly brown.
