In a blender, combine cashews, cilantro, garlic, green onions, sugar, pepper and cumin. Mix with short bursts until well blended.
In a microwave-safe bowl, combine vinegars, honey, prune and saffron. Microwave for 1 minute. Stir, then pour into the blender with the cashew mixture and mix with short bursts until well combined (about 20 seconds).
Pour the blended sauce into a bowl. Add oil and stir by hand. Refrigerate 1 cup of the sauce for dipping.
Brush chicken with the remaining sauce. Grill the chicken for 4-5 minutes on each side, or until or until a meat thermometer inserted in the center registers 170°F.
Serve with the cashew sauce on the side for dipping.
