Grilled Chicken with Cashew Dipping Sauce

  • 1/2 cup Whole Fancy Cashews, minced
  • 1 1/3 cups cilantro leaves, chopped
  • 4 garlic cloves, minced
  • 4 green onions, chopped
  • 2 tablespoons sugar
  • 2 teaspoons ground pepper
  • 2 teaspoons ground cumin
  • 2 1/2 tablespoons white vinegar
  • 2 teaspoons balsamic vinegar
  • 1 cup honey
  • 1 teaspoon mashed prune
  • Pinch of ground saffron
  • 1/2 cup olive oil
  • 4 boneless, skinless chicken breast halves


  1. Preheat the grill to medium.
  2. In a blender, combine cashews, cilantro, garlic, green onions, sugar, pepper and cumin. Mix with short bursts until well blended.
  3. In a microwave-safe bowl, combine vinegars, honey, prune and saffron. Microwave for 1 minute. Stir, then pour into the blender with the cashew mixture and mix with short bursts until well combined (about 20 seconds).
  4. Pour the blended sauce into a bowl. Add oil and stir by hand. Refrigerate 1 cup of the sauce for dipping.
  5. Brush chicken with the remaining sauce. Grill the chicken for 4-5 minutes on each side, or until or until a meat thermometer inserted in the center registers 170°F.
  6. Serve with the cashew sauce on the side for dipping.
