Roasted Sweet Potatoes

  • 2 lbs. sweet potatoes, peeled and cut into 1 inch chunks
  • 1 red onion, peeled and cut into 1/2 inch chunks
  • 1 Tbsp. olive oil
  • salt and pepper to taste
  • 1 tsp. fresh sage, minced


  1. Preheat oven to 425.
  2. Combine all ingredients in a large bowl.
  3. Spread in one layer on a greased baking sheet.
  4. Bake for 30 minutes or until vegetables are tender and browned.
